
| Green tea was the first tea to be drunk in China. The first complete written records of
tea drinking date back to the Tang Dynasty (618–907) and are attributed to Lu Yu, the
“Tea Saint“ of China and author of the seminal Cha Jing (“The Book of Tea“). This period saw the first flowering of tea culture as “tea feasts“ rose in popularity among the royals.
During processing, green tea leaves are exposed to heat, which renders the leaves
pliable for rolling and halts the enzymatic reaction that would change the tea color
to black. Green tea has a moderate amount of caffeine and ranges in flavor from
vegetal to nutty; some green teas are scented with jasmine. |
