Tea is a hot beverage made from the leaves of the tea plant (Camellia sinensis). There are six different types of tea: white tea, yellow tea, green tea, oolong tea, black (or red) tea, and pu erh tea. Tea is categorized according to the area in which the leaves are grown and the type of processing the leaves undergo after they have been plucked. dynasTEA also carries “flower tea,” which contains not tea leaves but flowers or flower buds. Why is the tea plant called “Camellia sinensis”? The legendary Swedish botanist Carl Linnaeus, also known as Carl von Linné or Carolus Linnaeus, named the species in 1753. Sinensis means “China” in Latin. China is the birthplace of tea. It was first brewed there around 5,000 years ago by Shen Nung, the “Agriculture Saint” of China. What is the difference between oxidation and fermentation? Exposing tea leaves to air—oxidation—is a major part of tea processing, giving black tea, for example, its distinctive flavor as well as its dark color. Traditionally, the word fermentation has been used, somewhat imprecisely, in place of oxidation. In the context of tea, the two words mean essentially the same thing. What are the health benefits of tea? Tea contains polyphenols, a type of antioxidant. Antioxidants are widely believed to shore up the body’s defenses and protect cells from free-radical damage that can lead to cancer. It is suspected that high levels of polyphenols in the body can guard against many types of cancer, including pancreas, colon, bladder, prostate, and breast cancer. According to experts at the USDA Human Nutrition Research Center, because of its concentration of polyphenols, one cup of tea has the antioxidant equivalent of four glasses of orange juice! Tea has also been found to reduce the risk of heart disease and boost oral health (it contains fluoride). What is the difference between oxidation and fermentation?
